I booked this trip as a surprise for my husband’s birthday, and it far exceeded our expectations. Mahi mahi are some of the most beautiful and fun fish we target - those golden sides with electric blue and green colors are something to see. They run 15-30 pounds on average but can push 50+, and they're built for speed and acrobatics. We find them under floating debris, weed lines, and around current edges, usually in water 100 feet and deeper. Spring through fall is prime time when they follow the Gulf Stream north. What guests love about mahi is how they light up in amazing colors when hooked and their aerial displays during the fight. They also school up, so where there's one, there's usually more. Plus, they're fantastic eating with firm, sweet white meat. Here's my best tip - once you hook the first one, keep it in the water next to the boat while others cast. The hooked fish will often call in the rest of the school, and you can have multiple hookups going at once. Just watch those flying fish!

Cobia are one of our most underrated targets - these brown, shark-looking fish are absolute bruisers that'll give you a workout. They average 40-60 pounds and can push 6 feet, with that distinctive single dorsal fin that often gets them mistaken for sharks at first glance. We spot them around reefs, wrecks, and channel markers in 20-60 feet of water, usually cruising solo or in small groups. Spring migration from March through May is our best shot at them, plus they hang around structure all summer. What makes cobia special is their incredible table fare - firm, white meat that's as good as it gets. They're also sight-fishing targets, which makes for exciting visual fishing when we can spot them near the surface. My go-to technique is a bucktail jig in the 4-6 ounce range. Color doesn't matter much, but cast ahead of them and work it slowly - cobia are curious but they don't like to be rushed.

Wahoo are pure speed demons that'll test your reflexes and your tackle. These silver bullets with blue tiger stripes typically run 3-5 feet and 30-80 pounds, built like torpedoes for their 50+ mph bursts. We target them in blue water anywhere from 100-300 feet, often around weed lines and temperature breaks. Fall through early spring gives us our best wahoo action when they move through following the bait migrations. What makes them special is that blistering speed and those razor-sharp teeth - they'll cut right through mono, so we always run wire leaders. Plus, they're phenomenal eating with mild, flaky white meat that's perfect for the grill. The key to wahoo fishing is speed - we troll fast at 12-15 knots with high-speed lures. My secret weapon is running a jet-head lure with ballyhoo way back in the spread. That long rigger position away from the boat noise often gets the bite when nothing else will work.

Bull sharks are the apex predators you'll find prowling our shallow coastal waters here in Palm Beach. These thick-bodied sharks typically run 8-12 feet and pack serious muscle at 200-300 pounds. What makes them special is their ability to handle both salt and fresh water - they're one of the few sharks that can do this. You'll find them cruising reefs, wrecks, and even harbor areas in 30 feet or less, though they'll roam deeper when hunting. Summer through fall gives us the best action when water temps climb. Guests love targeting bulls because they're aggressive fighters with plenty of power, plus they're always a thrill to see up close. My best tip? Fresh eel is absolute gold for bait - its high oil content and tough skin make it irresistible to bulls and it stays on the hook through their initial strikes.

Sailfish are hands down the most spectacular fish we target off Palm Beach - these blue and silver rockets can hit 60+ mph and put on a show like nothing else. Most run 6-8 feet and around 50 pounds, with that signature sail dorsal fin they flash when excited. We find them in 30-65 feet of water, usually following baitfish along the current breaks. Winter months from November through March are prime time here in South Florida when they migrate through in good numbers. What guests love most is watching them light up those vertical bars when they're hunting and seeing them tail-walk across the surface during the fight. They're also great table fare with firm white meat. Here's a local trick - when kite fishing for sails, keep that bait skipping on the surface and be ready to drop back quickly when they show up. That initial free-spool can make the difference between a hookup and a missed opportunity.
